About Us

Molisexport aims to let the world know about the excellence of food specialties made in Molise and Italy, the country with the widest agri-food variety in the world.

According to the census made by the Farmers’ Association “Coldiretti”, there are more than 5.000 traditional food specialties.

Despite these outstanding numbers, Italy represents only the 5th country in Europe for agri-food export. For this reason, our purpose is to spread and reach our customers worldwide.

Il Molise

Il Molise è la seconda regione più piccola d’Italia. Ha un territorio suddiviso quasi equamente tra montagna e collina ma anche un breve tratto litorale sul Mar Adriatico. Questa varietà di paesaggi, unita a un clima mite e a un basso tasso di urbanizzazione (è una delle regioni a più bassa densità di popolazione), permette una grande varietà di allevamenti e colture di qualità.

Our poultry is fed on an entirely vegetarian diet, free of hormones, additives and meat by-products. Eggs are hand-picked twice daily, to ensure that there are plenty to satisfy our many loyal customers.

The Star

Caciocavallo

“Caciocavallo”, having deep roots in Molise and Southern Italy, represents a true excellence. It is a “pasta filata”cheese, you can eat in purity, with a piece of bread, with jams, honey, or cold cuts.

It is produced with cow’s milk with rennet, lactic ferments and added salt. Traditionally it is aged hanging astride a beam for drying.
the name Probably arises from “Cacio” that is another way to say cheese and from the characteristic mentioned above in the production process (in Italian to be “astride” is said “a cavallo”).

During its centuries-old history, Caciocavallo has been subject of several evolutions that have led to having Caciocavalli throughout southern Italy today, each with its own peculiarities. Furthermore, being handmade products, each dairy has its own method creating an unlimited variety of flavors .

Scamorza

Scamorza is a short-aged “pasta filata” cheese produced in different regions of southern Italy.

The name of this kind of cheese comes from the “scamozzare” verb, which means “to remove a part” and refers to the typical gesture every cheesemaker makes by breaking the top of the scamorza.

The shape of the Scamorza is quite unique: it appears as a sort of pear, wider in the lower part with a small head at the top, which can be more or less accentuated; under the head , there is a string to hang the cheeses in pairs and make them drain.
Scamorza has an intense taste of milk, which flavor is peculiar.

The consistency is soft and the color is white or straw yellow, as well as the outer rind, which varies in color depending on the seasoning.
